Not gonna lie – I LOVE PANCAKES! What I miss most about gluten as a celiac on keto is the fluffy deliciousness of a buttery crisp, fluffy pancake. But, I have come as close as humanly possible to something amazing here. I hope you enjoy them as much as I do!
Cinnamon Keto Pancakes
1/2 cup + 1 tbs Almond superfine Flour
1/2 cup full-fat cream cheese
4 eggs (Scramble well with lots of bubbles)
1 to 1 1/2 tsp cinnamon
1 tsp to 1 tbs Swerve or Monkfruit sweetener (depending on what you like)
1/4 to 1/2 tsp vanilla extract (depending on what you like)
2 tsp to 1 tbs Baking powder (depending on what you like)
1/4 tsp pink Himalayan salt
And as much butter as you need to fry them up.
This makes about 8 pancakes – the nutritional values will depend slightly upon how much cinnamon, vanilla, and baking powder you use but is based on the smallest amount of each below.
Serving size is 2 pancakes.
